For those saying crust, this is the crust. It goes around the whole loaf and most kids have their mom’s cut it off their sandwiches. Lol The end part is called the heel. 😊
The part I throw away when the loaf is gone. I move it, take the next piece and put it back. I’m not quite sure why I don’t just throw it away when I first open the loaf. 🤷🏻♀️

Since my grandpa and dad own/ran a small town bread bakery…but we did got into 4 states, it is called the heel…each end of the loaf has one and they are great with butter and jelly, toasted or French toast. YUM!
My grandparents used to fight over the heel, in an effort to convince us grandkids that it was actually good…….it didn’t work, but every time I move it out of the way to get the next piece of bread, I always think about them.
Save it. Break into little pieces, let dry out, grind and save. Use as breading on chicken, filler when home baking bread, sneak into oatmeal, stretch meatloaf, ..Use your imagination.

Yes, the heel….when I was a child, my mother made a big deal about wanting the heel, where Dave and I went for it and always got it, I still prefer the heel to this day, on reflection I don’t think my mother liked the heel!
The heelHa! When I get down to two heels left in the bread bag, I taken them out and crush them up for bread crumbs and freeze them. Great later for meatloaf, meatballs, etc.
Hahahahaha…love some of the answers … it is the crusty heel … and no there is no scientific proof that replacing it each time a piece of bread is taken, to cover the next piece, to retain its freshness … but hey, why not…however closing the bread box, retwisting the bread tie, or resealing the plastic wrapping…sure helps the loafs longevity. We called it ‘the topper’ when I was a child, and I was always told to eat the bread crusts because they would make your hair curly, and yes I ended up with curly hair the bane of my life! Mind you eating my carrots as told, did not make me able to see in the dark!
Take both ends and put your meat , mayo and whatever between the ends for a flat bun treat or toast both ends and put peanut butter on (no jelly) for a great treat
The heel. My favorite. I always get it when we open a fresh loaf. Then when we get close to the end of the loaf, I dig it out from underneath the other bread slices. Which is okay, since no one likes the heel besides me!

In my house they all called it Dads slice (they wouldn’t eat it and I couldn’t waste it). But officially it is called a heel.
Worked in a couple bakeries, machines had parts to hold sliced bread in place while being bagged that were called heel plates.

I save the heel and make bread crumbs with them. Keep them in freezer until I have enough for a batch

I take the heels outside and pinch them into small pieces for the birds. My grandma taught me that when I was a little girl!
